Makes 1 dozen cookies
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup (2 sticks) sweet butter (or unsalted)
3/4 cup granulated sugar
3/4 cup unrefined light brown sugar
2 teaspoons vanilla extract
2 eggs
2 cups (7 ounces) chopped peacans
1 cup (5 ounces) bitersweet chocolate chips
Preheat the oven to 375 degrees. Grease and line a 9 X 13 inch pan.
Sift together the flour, baking soda, and salt. Beat the butter and sugars together with the vanilla extract.
Beat in the eggs. Stir the flour mixture, nuts, and chocolate chips into the mixture.
Spoon the batter into the pan. Bake 25 minutes until golden and firm. Cool in the pan for 5 minutes and
cu into squares. Remove from the pan and cool on a wire rack.
Store in an airtight container for 3 to 4 days.
